Lime Pots de Creme
 
1 teaspoon lime zest
1/3 cup fresh lime juice
1/2 cup sugar
4 eggs
1/2 cup 2% milk

Pre-heat oven to 325°.  Place lime juice, lime zest, sugar, eggs and milk in a blender container and blend on low for one minute. Strain through a fine sieve into a container with a spout.  Fill six 1/2-cup ramekins or custard cups 3/4th of the way with lime mixture. Place in a large baking pan and fill with hot water to the level of the custard in the cups.  Carefully place in oven and bake for 30 minutes, or until just set.
