Georgian Room

The Cloister

Some of our finest things are not on the menu.

While gracious and affable do not typically describe a Five-Star chef, those words are entirely appropriate for Chef Aaron and the atmosphere he creates in his kitchen and throughout the dining experience at the Forbes Five-Star Georgian Room.  Nestled in one of the most beautiful environs within The Cloister, the open layout of the dining room and floor-to-ceiling windows allow natural light to permeate the space and reflect off the chandeliers that then sparkle with light as the sun sets.  Chef Aaron’s vision is to reinvent your favorite classic dishes using French techniques with à la carte options that change seasonally and give you the versatility to mix and match to create your own menu.  Or, opt for the multiple-course tasting menu, which changes nightly based on the freshest local ingredients.  Collaboration between the culinary and beverage teams results in wines and cocktails that perfectly complement your meal.  Whether you’re looking for a leisurely, romantic dinner or a meal prior to Bingo, the length of your experience is up to you.  And the Chef’s Table and Kitchen Table let you see up close all the workings of a Five-Star kitchen and culinary team while having a fun, unique experience.

In Chef Aaron’s own words:

“I have always been inspired by how food brings people together.  When I was unsure of what I wanted to do with my life, I began working in a restaurant, where I was inspired by the Michelin-star chef to become a chef myself.  And I have been lucky during my career to work with several great chefs who played a role in shaping my view of the kitchen and cuisine.  Today, I find inspiration for our menus by visiting the local growers and farmers of Georgia.  My goal is to develop delicious menus by partnering with these folks to bring their products to life in a way that will leave a lasting impression on each guest that visits the Georgian Room.  I also hope you will take with you the feeling that you connected with your dining companions through a great meal in the most hospitable, gracious restaurant in the world.”
