In Chef Matthew's Own Words
While many chefs grew up helping relatives in the kitchen, I entered the culinary world simply to earn some pocket money. I began by working in my high school cafeteria and then in a fast-food establishment. When I moved to a bakery, I got my first glimpse of scratch cooking and was hooked. It quickly became evident that I had a passion for cooking and, luckily for me, it was something I was good at. My competitive spirit has helped propel my culinary career, pushing me to provide the best food, the best experience, and - most importantly - the best memories. I am also passionate about finding the best providers of ingredients and developing long-term relationships with them. They see the tremendous respect I have for their ingredients, because I know they are the foundation for every great meal. With every great meal, we get closer to my goal of Colt & Alison being known for setting the bar for all classic American steakhouses. I hope you’ll come experience it for yourself.
The Lodge Wine Cellar
An exposed-brick staircase carries guests through candlelight to the intimate, bottle-lined chamber to a very private multi-course meal. The well-balanced collection offers prestigious international classics, vintages dating to the 1830s, traditional favorites, and adventurous varietals, as well as five exclusive Sea Island private-label wines produced by esteemed vintners.
