My earliest memories are of being in the kitchen with my mother and grandmother, who taught me that food doesn’t need to be complicated to be delicious. I grew up helping my aunt in her small restaurant, where she wanted you to remember not just her food, but how you felt when you enjoyed it with others. Because of that, in my travels around Italy, I always looked for small family eateries where I could eat like a local. “When I am asked how a Mexican chef became the head chef at an Italian restaurant, I explain simply that it’s because there are many cultural similarities between the two cuisines. It’s not just ingredients and flavors, but the strong focus on food and how meals connect family and friends, rather than just being about eating.
