The Macallan Dinner at The Georgian Rooms

A gilded celebration of craftsmanship, cuisine, and scotch—designed for the discerning palate.

An evening of rarefied indulgence awaits in the Georgian Room’s Orangerie, where haute cuisine meets the artistry of Speyside. Chef de Cuisine Joel Peralta presents a lavish multi-course menu; each plate paired with illustrious expressions from The Macallan—from the timeless Core Range to highly coveted Limited Releases. A distinguished representative from The Macallan will guide the journey, while Resort Bars & Spirits Manager Nic Wallace elevates the experience with bespoke whisky pours and cocktails. Following dinner, guests may elect to purchase additional, exquisitely measured pours from The Macallan Fine & Rare Collection and sign the exclusive “Sea Island x The Macallan” secret book.
